Salads
Ingredients for 2 servings
- 30 g couscous
- 60 ml water
- 2 Cocktail tomatoes
- ¼ Cucumberurke
- 50 g Paprika
- 1 EL chopped Mint
- 1 EL chopped Parsley
- a little lemon juice
- some Olive oil
Preparation

Place the couscous in a bowl and pour boiling hot water over it. Cover and leave to swell for approx. 10 minutes until the water is completely absorbed.

In the meantime, thoroughly wash and chop the vegetables, mint and parsley.

Then mix the couscous and vegetables with the lemon juice and olive oil and arrange in a bowl.
Tip:
This salad is also very suitable as a cold lunch. Instead of couscous, you can also use fine bulgur (prepare according to the packet instructions).
