Main course Ingredients for 2 portions 2 carrots 10 g ground walnuts 50 g Emmental cheese 2 tsp mild curry powder 4 slices wholemeal toast Preparation Preheat the sandwich toaster. Peel and grate the carrots and grate the cheese. Mix the grated carrots with the ground walnuts, cheese and curry. Spread onto 2 slices of sandwich toast. Summer soup

Soup ingredients for 2 portions of soup 1/4 cucumber 1 small ripe tomato 1/2 pepper 1 tsp vinegar (or lemon juice) 1 tsp olive oil 1 tbsp bread cubes 3 basil leaves a little mild paprika powder Preparing the soup Wash, clean and chop the vegetables. Finely puree the chopped vegetables together with the olive oil, vinegar, bread cubes and basil using a hand blender. Flavour with a little paprika powder.
